Poached Tilapia over Steamed Spinach & Sourdough Toast

Indredients
Tilapia 16 oz
Spinach - 2 bags
Sourdough Bread (Sliced Thick)

Steam spinach in a double boiler, add salt and toss. Steam until wilted and set aside to drip dry.

*Put sliced sourdough bread in the oven to toast, or simple toast in your toaster if has a thick enough setting. If using the oven, broil on the low setting. Stay by the oven as these will toast quickly. Once golden brown, flip and repeat.

Boil 3 inches of water in a deep frying pan. Add fish and cook submerged until white. Depending on the filet size, anywhere from 3-6 minutes.

Drain water and allow to "dry" in pan for a 5 minutes while pan is off the burner and warm.

Layer Bread, then spinach, then tilapia on top. Salt and pepper to taste. This is beautiful served without sauces enjoying the natural flavor of all the food, or a very neutral base for any sauce, from sweet teriyaki to red or cream sauces.
